This week’s Sunday Eats is a healthy but fulfilling one. If you’re like me, growing up, salads were pretty basic. Lettuce, cucumbers, tomatoes, and maybe some onions and croutons.
My mom was so serious about getting us to eat healthy foods; I thank her for my love of veggies. I know some people who just won’t eat them. Luckily, salads have evolved so much that you can put almost anything in them! Personally, I will not even touch a salad if it doesn’t have dried cranberries in it.
So here’s what we’re gonna do. We are gonna experiment with vegetables to make your very own “All-In” Salad. Yep, that’s what I said ALL-IN meaning don’t be afraid to throw different things in your salad to create a special taste!
Let’s start by choosing a lettuce, whichever makes you happy. I’m a Romaine girl myself. Try Iceberg, mixed greens, spinach, then add your basics: chopped cucumber, tomatoes, and onions. And now let’s get creative. Try adding the following to your salad. Don’t overdo it, but try different variations of the following ingredients.
Ingredients:
Dried cranberries
Sliced fresh pears
Sliced fresh apples
Zucchini
Almonds (You can candy them by putting them in the oven with brown sugar for 10 minutes and stirring until glazed.)
Chick peas (And they are good for you.)
Avocado (This is the good fat.)
Peppers (Red/green/yellow)
Boiled eggs
Sliced turkey (If you eat meat.)
Sliced carrots
Roma tomatoes (They are not as mushy as regular tomatoes.)
Alfalfa sprouts
Cilantro
Corn
Black beans
Directions:
Add your choice of ingredients, then season with Mrs. Dash and pepper (tossing thoroughly) and refrigerate before you serve. If you season it good enough you’d be surprised at how good it taste without salad dressing!
Try and find a special salad dressing at Trader Joe’s, Marshalls, and of course, your local neighborhood grocery stores. Lately, even Wishbone has gotten creative with their salad dressings so you can find exotic tastes almost anywhere!

One of my favorites is Girard’s Champagne Vinaigrette salad dressing. Then mix it with another random salad dress. Serve this as is, or top it off with a grilled fish like jerk salmon and bon apepetit! You’ll feel full and get your much needed veggies at the same time!

That looks GREAT Free. My mom was the same way about eating healty. We grew up IN LOVE with salads & substituting apples for candy. In my house now we cant go without eating salads. I mix mine up depending on what I have on hand, but I have to have cheese, ham & egg, besides the usual lettuce, tomato and cucumber. I have added mango, peaches, raisins, usually whatever I already have goes really well. Ken’s Steak House Italian (plain not zesty) is my favorite esp with salads with red onion! I thought I would share one of my favvourite salads that I make with you, I do it with romaine, and then I throw in some tomatoes,cucumbers, onion, shredded carrots, corn,red peppers, edamame beans, some chopped ham , boiled egg and I dress it with ranch dressing, it is sooo o good you should try it.
